     Non-chicken patties

Ingredients
2 15 oz cans garbanzo beans
1 1/2c uncooked quick cooking oats
1 clove garlic, minced
1/2c water or chicken broth
 

Instructions
Drain garbanzo beans. In a food processor or blender, process beans with about 1/2-cup water or chicken broth, adding more liquid if needed to make a smooth, thick paste. In a medium mixing bowl, combine bean paste, oats, garlic, and salt and pepper to taste. Mix well, adding additional liquid or oats as necessary to make a mixture that holds together well and keeps its shape. Shape mixture into 8 patties about 1/2-inch thick. Spray a 12-inch nonstick skillet with vegetable cooking spray. Heat skillet over medium-high heat. Add patties and cook until golden brown on each side, about 5 minutes. Makes 8 servings.
Helpful Hint- Serve patties as sandwiches in whole-grain buns with lettuce, tomato and nonfat mayonnaise. You can also serve patties with potatoes, cranberry sauce and steamed vegetables.
