     Mandarin Shrimp Stir Fry

Ingredients
1 lb shrimp
1/3 cup chicken stock
2 tdsp rice wine or dry white wine
1 1/2 tsp soy sauce
1 1/2 tsp cornstarch
3/4 tsp sugar
1/2 tsp pepper
1 Tbsp olive oil
2 Tbsp minced garlic
 
1 tsp minced ginger
6 oz snow peas
6 oz baby corn
2 Tbsp fresh chives

Instructions
Mix together stock, wine, soy sauce, cornstarch, sugar and pepper. Set aside. Heat oil in large skillet. Cook shrimp until pink. Stir in garlic, ginger and a little more oil. Stir in snow peas, corn and chives. Stir in broth mixture. Serve with rice.
