     Machaca Nortino (Northern-Style Shredded Beef)

Ingredients
1 chuck roast 4 lb
salt and pepper to taste
2 Tbsp Mexican oregano toasted
2 Tbsp Ancho chili powder
1 cup shredded carrots
1 large onion sliced
6 cloves garlic cut in half
6 bay leaves, toasted
2 tsp thyme, toasted
 
2 cups water
Topping-
1 Tbsp toasted oregano
1/2 cup chopped cilantro
4 cloves minced garlic
one large jalapeno diced finely

Instructions
In large pan and olive oil to coat pan. Sear meat on all sides. Place meat in roasting pan and distribute vegetables under and over the roast. Add water and cover tightly. Preheat oven to 350. Roast 2 1/2 hours. Check after 1 hour and mix veggies and turn meat over. Reserve pan drippings.
Shred beef. In a skillet saute one onion sliced and saute with butter and sugar over med heat to caramelize. Add 4 tomatoes, seeded and sliced. Cook 1 minute and add 1 juiced lime. Add topping. Mix and sprinkle over meat.
