     Rigatoni Sorrentina

Ingredients
3 tblspn. olive oil
8 oz. arugula
1 tsp. oregano
2 tblspn. chopped garlic
salt
pepper
3 c. plain tomato sauce
1 lb. rigatoni
1/3 lb. buffalo mozzarella, sliced
 
1/4 c. chopped basil leaves

Instructions
In 12 in. saucepan, heat olive oil until smoking. Cook arugula, oregano, salt, pepper stirring until arugula is wilted and garlic is lightly browned.
Add tomato sauce. Simmer until reduced as desired.
Cook pasta according to box directions.
Add cooked pasta to sauce and toss in mozzarella and basil.
