     Veal Milanese

Ingredients
6 veal top round cutlets, 5 oz. each
2 c. Italian breadcrumbs
2 tblspn. chopped parsley
6 eggs, beaten
1/2 c. olive oil
salt
pepper
 

Instructions
Pound veal cutlets to 1/4 in. thick. Season veal with salt and pepper.
Dip cutlets in eggs, then into breadcrumbs to coat.
In large skillet over med. heat, heat oil. Cook veal 1 1/2 - 2 min. per side.
Sprinkle with parsley
