     Vegan Corn Chowder

Ingredients
1/2 cup diced carrots
1/2 cup diced onion
1/3 cup diced celery
1 and 1/2 cups diced potatoes
2 cups frozen corn
6 cups water
2 tbsp onion powder
2 tbsp garlic powder
1 tbsp celery salt
 
2 tbsp parsley
2 tbsp italian seasoning
1 and 1/2 cups raw cashews

Instructions
Bring water to boil and add vegetables and spices. Add corn last since it doesn't take as long to cook. Cook until vegetables are done.
Put the cashews in the blender with a cup of water and blend until smooth. Slowly add to the soup.
