     Caramel Corn

Ingredients
1 cup butter
2 cups brown sugar
1/2 cup corn syrup
1 tsp salt
1/2 tsp baking soda
1 tsp vanilla
6 quarts popped popcorn
 

Instructions
Melt butter, stir in brown sugar, corn syrup and salt. Bring to boil, stirring constantly. Boil without stirring for five minutes.
Remove from heat, stir in baking soda and vanilla. (Add nuts at this point if you wish, 2 cups or so) Pour slowly over popcorn, mixing while pouring. Mix well and turn in two shallow pans. Bake at 250 degrees for 1 hour, turning every 15 minutes. Remove from oven and cool.
