     Scalloped Potatoes

Ingredients
6 medium boiling or baking potatoes (2 lbs.) Peeled
3 Tbsp. margarine or butter
1 small onion, finely chopped (1/4 cup)
1 tsp. salt
2 1/2 cups milk
3 Tbsp. Flour
1/4 tsp. pepper
1 Tbsp. margarine or butter
 

Instructions
Heat oven to 350 degrees. Grease bottom and sides of 2-quart casserole with shortening.
Boil potatoes whole until tender (about 10-15 min.). Cool by running under cold water. Cut into thin slices.
Cook onion in 3 Tbsp. melted butter until tender. Stir in flour, salt and pepper. Stir constantly and cook until smooth. Remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute.
Spread potatoes in casserole. Pour sauce over potatoes and dot with 1 Tbsp butter. Cover with foil and bake for 30 minutes. Uncover and bake 1 hour or until potatoes are tender. Let stand 5 to 10 minutes before serving.
