Egg and Hash Brown Casserole

Ingredients
-
2 c. thawed hash browns
-
5 eggs
-
1/2 c. cottage cheese
-
1 c. shredded Swiss chess
-
1/2 c. chopped onion
-
1 tsp. salt
-
6 to 8 slices of cooked bacon, crumbled
-
Paprika
 

Instructions
Beat eggs, add potatoes, half of crumbled bacon, and all other ingredients except paprika. Pour into a 9 inch pie pan. Sprinkle paprika on top, and place rest of bacon on top.
Bake at 350 degrees for 35 minutes.
THIS CAN BE REFRIGERATED OVERNIGHT.
Serving Suggestions
Serve with salsa and fruit.
