Ingredients
2 Cups Flour
2 tsp Baking Soda, Add to 3-4 cup Buttermilk
2 tsp Cinnamon
1-2 tsp Salt
3.5 oz Coconut
1 Cup Chopped Walnuts
3 Large Eggs
3-4 Cup Vegetable Oil
2 Cups Sugar
 
2 Cups Carrots finely chopped
1 Can 8oz Pineapple crushed and drained
2 tsp Vanilla
Frosting Glaze
1 Cup Sugar
1-2 tsp Baking Soda add to 1-2 Cup Buttermilk
1 Tbsp White Karo Syrup
1 tsp Vanilla
1 Cube Butter

Instructions
Cake Mixture Mix dry ingredients Flour Cinnomon Salt set aside
Beat eggs add oil buttermilk mixture and sugar and vanilla add to dry ingredients
Mix in with spoon pinapple coconut nuts Add Carrots Pour mixture into cake pan Bake at 350 degrees for 55 minutes
Buttermilk Glaze Frosting Mix all ingredients except vanilla Bring to a boil Boil 5 minutes Add vanilla and pour over hot cake
Serving Suggestions
Eat while cake is hot, but it is great cold, with coffee, or a nice cold glass of milk
