     Breakfast Burritos

Ingredients
1 Med Potato
1 lb Italian Sausage
1 Small Onion, chopped
1 tsp Chili Powder
1 Dash Cayenne Pepper
2 Eggs
6 Flour Tortillas
1 Cup Monterey Jack Cheese Shredded
Tomato
 
Salsa
Sour Cream

Instructions
Cook Potato in water for 35 minutes untl tender. Cool
Peel and cut cooled potato into cubes.
Brown Sausage in frying pan, add chopped onion, chili powder and cayenne pepper. Cook 10 minutes. Drain and discard fat. Add cubed cooked potato
Beat eggs and add to pan. Stir until eggs are set. Spoon mixture into cent of warmed tortilla and top with shredded cheese.
Serving Suggestions
For an authentic, mexican touch, serve topped with tomato, sour cream and salsa.
