Category   Breakfast - Brunch
Sub Category   None

3 1/2 cups all purpose flour
1/2 cup sugar
1 package dry yeast
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspon ground nutmeg
2/3 cup milk
1/2 cup butter, softened
3 large eggs
1 cup raisins
icing (see bottom for recipe)

In a large bowl, mix together 1 cup flour, sugar, yeast, salt, cinnamon and nutmeg. In a small sauce pan, heat milk and butter to very warm. Butter doesn't need to completely melt. At medium speed, gradually beat milk mixture into flour mixture for 2 minutes. Add 2 whole eggs and 1 yolk. Reserve the white for glaze. Beat for 1 min. Gradually work in 2 more cups flour. Turn out onto a floured surface- knead in the raisins using as much of the remaining flour as needed to make a smooth and satiny dough. 5-8 min. Place in large greased bowl, tightly cover bowl with plastic wrap. Let rise in a warm place until doubled, about 1 1/2 hrs. Punch down dough. Form into 12 equal balls (smooth), pinching dough together on bottoms. Place 2 inches apart on greased cookie sheet. Let rise in a warm place until almost doubled, about 1 hour. Lightly beat the remaining egg white, brush over buns. Bake in center of pre heated oven at 375 degrees for 15-20 minutes.
Cool on wire rack. Use icing to form a small cross on each bun.
ICING- In a small bowl, measure 3/4 cup powdered sugar and 1/2 teaspoon vanilla. GRadually beat in 2-3 teaspoons milk to make a smooth thick icing.
