Springtime Vegetable Risotto

Ingredients
-
1/2 diced zucchini, small
-
1/2 c. diced eggplant, small
-
1/2 diced red bell pepper, small
-
1/2 c. giant lima beans
-
1/4 c. arborio rice
-
1 tsp EVOO (optional)
-
1 tbsp chopped walnuts
-
1 heaping spoonful nooch
-
1/2 c. water
 
-
sea salt and hot chili flakes to taste

Instructions
In saucepan, combine everything except walnuts, nooch and seasonings. Bring to boil and then reduce to simmer and let cook until rice has absorbed water, stirring occasionally. (about 20 min)
Add walnuts, nooch and season to taste with salt and pepper.
