     white and dark iced chocolate parfait

Ingredients
400g white chocolate
400g dark chocolate
1 litre cream for custard
12 egg yolks
12 egg whites
600ml whipped cream
2 sheets gelatine
whisky liquer
sugar to taste
 

Instructions
make up custard with egg yolks sugar and cream
add whisky liquer and soaked gelatine sheets
melt chocolate in separate bain maries add half custard mix to each fold in whipped cream and whipped egg whites
pour 1 mixture into lined loaf tins and freeze for about 1 hour. take out and add other mixture. refreeze when ready, cut on a diagonal angle and serve with raspberries and fruit coulis. grated chocolate over the top
