     Chinese Fish Congee

Ingredients
0.75 cups medium grain white rice
4 cups of water
4 cups of chicken broth
0.75 to 1lb of white fish (tilapia, cod, haddock)
3 tlbsp soy sauce
2 tlbsp sugar
3 tlbsp of white ground pepper (regular ground pepper is fine)
4 thin slices of fresh ginger
0.5 bundle of scallions (green onions)
 

Instructions
Pour the broth and water into a pot and bring it to a boil. Pour in the rice once the liquid is boiling. The porridge will take 30 minutes to become thick.
Julienne the ginger and chop the green onions and set it aside. Now cut the fish in thin slices and marinate it with soy sauce, sugar, ginger, and pepper. Cover the fish until it's ready to be put into the porridge.
When the porridge is done (thick), put the the fish in and let it simmer in low heat for 5-8 minutes, while occasionally stirring. Then serve with green onions as garnishing.
