     Hummingbird Cake

Ingredients
450 g crushed pineapple in syrup
1 cup flour
1/2 cup self raising flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp ginger
1 cup brown sugar
1/2 cup coconut
1 cup mashed banana
 
2 eggs lightly beaten
3/4 cup vegetable oil

Instructions
Drain pineapple and reserve 1/4 cup syrup. Sift dry ingredients, stir in sugar and coconut. Add wet ingredients and mix. Bake in greased, lined tim for 1 hour at 180. Ice with lemon cream cheese icing.
