     Cornbread Casserole

Ingredients
1 box Jiffy cornbread mix
1/4 to 1/3 cup sugar
1 can creamed corn
1 can corn, drained
1 small container sour cream
1 stick butter, softened (I omitted this and it was still good!)
2 eggs
Parmesan cheese
 

Instructions
Mix all ingredients except the Parmesan. Butter a 13 x 9 casserole dish and sprinkle with Parmesan cheese. Pour in the batter. Bake at 350 degrees for 45 minutes.
If you need extra oven space during holiday cooking, you can bake this ahead of time for 30 minutes, then bake the last 15 minutes just before serving.
You can also add jalapeno peppers to the batter. Some people put shredded cheddar cheese on top during the last 15 minutes, or between layers of batter before baking.
