     Chicken Corn and Black Bean Salad

Ingredients
1/3 cup apricot preserves
3 Tbsp. lime juice
1 Tbsp. oil
1 tsp. chili powder
1/8 tsp. pepper
2 cups cubed cooked chicken
1 red bell pepper, chopped
2 cups frozen corn, thawed and drained
15-oz. can black beans, rinsed and drained
 
lettuce leaves

Instructions
In small bowl, combine preserves, lime juice, oil, chili powder and pepper and blend well with wire whisk to combine.
Combine chicken, bell pepper, corn, and beans in large bowl and toss gently.
Pour dressing over chicken mixture and toss gently to mix.
Serve salad on lettuce lined plates.
Serving Suggestions
Apricot preserves, lime juice, and chili powder combine for a wonderful dressing that's good on any salad.
