8 oz angel hair pasta

| |
4 cups fresh baby spinach
|
| |
1 1/2 cups cherry tomatoes, halved
|

3 teaspoons olive oil
|
| |
1 medium onion, finely chopped
|
| |
1 lb shrimp, peeled and deveined
|
| |
3 cloves garlic, finely chopped
|
| |
1/2 teaspoon crushed red pepper
|
| |
1/2 cup white wine
|
|
|
| |
1/2 cup chicken broth
|
| |
salt and pepper to taste
|
| |
3 tablespoons fresh parsley
|
| |
2 tablespoons butter
|
|
|

Instructions |
|
|
|
in a large pot, cook pasta as directed. drain and return to pot. stir spinach, tomatoes, and 2 teaspoons olive oil into pasta.

while pasta is cooking, saute onion in remaining 1 teaspoon olive oil. add garlic, shrimp, and pepper flakes. cook and stir 2 minutes.
|
|
|
|
stir in wine, broth, salt and pepper. cook 2 minutes or until shrimp are pink and firm. remove from heat, stir in parsley and butter.
|
|
|
|
add shrimp mixture to pasta mixture. toss to mix.
top with a little parmesan cheese if desired.
