     Linguine with Clams, Tomatoes and Chiles

  Sauvignon Blanc

110 g (4 oz) Dreamfields low-carb linguine
4 tbsp butter cut into 1 tblsp. pads
2 tbsp minced garlic
2 tbsp minced onion
1 (6.5 oz) can minced clams, with juice
1/2 (10 oz) can Mild Rotel
1/2 tsp black pepper
Hard Romano or Parmesan to taste

Prepare pasta according to directions on box. (You should be able to prepare the remainder of the recipe in the time it takes the pasta to cook.)
In a large pan saute garlic in 1 tbsp butter over medium heat until garlic begins to turn golden. Add onion to garlic and butter mixture and continue to saute until onion begins to turn translucent. (Approximately 3-4 minutes.)
Add 1/2 can Mild Rotel to butter/garlic/onion mixture. Simmer over medium heat until mixture begins to reduce and tomatoes have lightly cooked (approximately 3 minutes). Add 1 can clams with juice and pepper to pan and continue to simmer over medium heat until clams have warmed through (approximately 2 minutes). Remove sauce from heat and gently stir in remaining 3 tbsp butter to combine.
Add cooked, drained pasta to sauce pan, toss and serve. Garnish with freshly grated hard Romano or Parmesan cheese to taste.
Serving Suggestions
The serving size ought to be an adequate meal portion for an average adult and contains less than 10g net carbohydrates.
