     Seafood Chowder

Ingredients
1 1/2 lb cod (or other white fish)
1 can chopped clams
1/2 lb cooked shrimp
8 oz bacon
2 yellow onions
1 box fish stock
6 sprigs of thyme
2 bay leaves
2 potatoes
 
2 ears of corn
1 cup milk or heavy cream if you are feeling decadent

Instructions
Chop up bacon into 1/2 inch pieces. Dice onions. Fry bacon in soup pot. Drain off most of the fat. Fry onions with the bacon in the remaining fat.
Peel and dice potatoes while onions are frying. Add potatoes, thyme, bay leaves, fish stock, clams. Simmer for about 15 minutes.
While soup is simmering ... Chop fish into bit sized cubes. Remove bones. Cut the corn off the ears. Add fish and corn to soup. Simmer another 5 to 10 minutes until fish is cooked.
Add shrimp and milk. Bring back to simmer. Serve.
Serving Suggestions
Serve with crusty white bread.
