     No Eggs Cocoa Cake

Ingredients
5 tablespoons butter, cut into thin pats
1 cup cold water
1 tablespoon cider vinegar
1 teaspoon vanilla
1-1/2 cups all-purpose flour
1 cup sugar
1/4 cup cocoa
1 teaspoon baking soda
1/4 teaspoon salt
 

Instructions
Grease and flour a 9 inch square cake pan. Stir butter over low heat just until melted; take of burner and cool.
In a 1 cup liquid measuring cup stir together water, vinegar and vanilla. In a medium bowl stir together flour, sugar, cocoa, baking soda and salt. Pour cooled butter, then water mixture over the flour mixture. Gently beat only until smooth-a matter of seconds. Pour into prepared pan.
Bake in a preheated 350 degree oven until a cake tester inserted in the center comes out clean-about 30 minutes. Let stand on a wire rack for 5 minutes. Loosen edges and turn out; turn right side up. Cool completely. Frost top and sides.
