     Hint of Honey Loaves

Ingredients
2 packages active dry yeast
1/2 cup warm water
2-1/4 cups milk, scalded
1/4 cup vegetable shortening
1/3 cup honey
2-1/2 teaspoons salt
6 to 6-1/2 cups all-purpose flour
2 cups Quaker Oats (Quick or Old Fashioned, uncooked
 

Instructions
Dissolve yeast in water. Pour milk over shortening, honey and salt; cool to lukewarm. Stir in 2 cups flour. Add dissolved yeast and oats; mix will. Stir in enough additional flour to make a soft dough. Turn out onto lightly floured surface; knead 8 to 10 minutes or until smooth and elastic. Shape to form ball. Place in greased large bowl, turning once to coat surface of dough. Cover; let rise in warm place about 1 hour or until double in size.
Punch dough down. Cover; let rest 10 minutes. Divide dough in half; roll out each half to form 15 by 9 inch rectangle. Roll up starting with narrow end; press together ends and seam to seal.
Place in 2 greased 9 x 5 inch loaf pans. Brush lightly with melted butter if desired. Cover; let rise about 45 minutes or until nearly double in size. Bake in preheated moderate oven (375 degrees) about 45 minutes. Remove from pans; cool on wire rack.
