     Garden Gazpacho

Ingredients
About 7 ripe tomatoes or 1-28 oz. can Muir Glen diced tomatoes
1 onion
2 cloves garlic
1 jalapeno pepper (seeds and ribs removed if desired)
2 bell peppers (green, red or yellow)
2 cucumbers
1 tablespoon olive oil
1/3 cup wine vinegar (I use balsamic)
3 to 6 sprigs herbs (cilantro or basil)
 
Optional- add Pomi strained tomatoes to taste (small)
Optional garnishes- avocado slices, greek yogurt, more herbs

Instructions
Chop all vegetables coarsely for processing in a food processor or blender. Process vegetables in batches, pouring into a large non-aluminum bowl to mix. Add vinegar and oil. Refrigerate for 3 hours before serving.
