     Frozen Key Lime Pie

Ingredients
1 prepared graham cracker crust
6 large egg yolks
1/4 c. sugar
1 14-oz can sweetened condensed milk
2 tbsp lime zest
3/4 c. freshly squeezed lime juice (4-5 limes)
a few drops of green food coloring (optional)
 

Instructions
Whisk together egg yolks, sugar and 1/4 c. of the lime juice atop a double boiler until thick (3-5 minutes).
Strain mixture and place in a mixer fitted with a whisk attachment. Beat on medium speed for a few minutes. Add condensed milk, remaining juice and zest. Add food coloring if desired and mix well.
Pour into pie shell and freeze at least 5 hours.
