     Chicken with homemade herb cheese

Ingredients
1 8-oz. package cream cheese, room temperature
1/4 cup (1/2 stick) butter, room temperature
1 1/2 tablespoons whipping cream
1/4 teaspoon garlic powder
1/8 teaspoon dried oregano, crumbled
1/8 teaspoon dried thyme, crumbled
1/8 teaspoon dried marjoram, crumbled
1/8 teaspoon dillweed
1/8 teaspoon dried basil, crumbled
 
1/8 teaspoon freshly ground pepper
4 whole chicken breasts, skinned and boned (left whole)
Salt and freshly ground pepper.

Instructions
Mix first 10 ingredients in medium bowl until smooth. Cover and chill at least 1 hour. (Can be prepared 1 week ahead.)
Preheat oven to 350 degrees. Pat chicken dry. Place chicken between sheets of plastic wrap and flatten to thickness of 1/4 inch using meat mallet or rolling pin.
Place 2 generous tablespoons of cheese in center of each breast. (Reserve remainder for another use.) Fold chicken over and secure with toothpicks.
Place in glass baking dish. Season with salt and pepper. Bake until springy to touch, about 30 minutes. Drizzle melted cheese in baking dish over chicken. Serve hot.
