Saute beef and onion in 1 tbsp. oil until meat is nicely brown, separate into bits with fork. Sprinkle flour over meat and blend well.
Add cooking wine. Cook, stir constantly until mixture thickens and boils. Remove from heat, add relish, worchestershire, salt and pepper.
Cut a thin slice from the top of each bun and hollow out the insides. Fill the hollow of each bun with the meat mixture (1/2 cup/bun); add a slice of cheese on top and replace tops.
Place in baking pan, cover and bake in moderate oven, 350 degrees, for 30 minutes. (or just melt cheese in the microwave.)
