Bourbon Pecan Smashed Sweet Potatoes

Ingredients
-
3 medium sweet potatoes (not yams) peeled and cut into chunks
-
3 TBspoons of butter, cut into small pieces
-
1/2 cup of chopped pecans
-
3 TBspoons of brown sugar
-
2 ounces of bourbon
-
1/2 cup of orange juice
-
1/4 to 1/2 tspoon of freshly grated nutmeg
-
salt and pepper to taste
 

Instructions
Bring water to boil in a medium pot. Add sweet potatoes and cook for 12-15 mins. Drain potatoes and leave in the colander. Return the pan to medium heat and add the butter, next add the nuts and toast for two mins. Add the brown sugar and let it bubble. Add the bourbon and cook out the alcohol, about 1 minute. Add the orange juice and the cooked sweet potatoes. Mash and serve
Serving Suggestions
these are so good for Thanksgiving dinner. you can use yams but sweet potatoes are much better
