Mix dressing well and refrigerate. Mix together Lettuce, onion. jicama, and cilantro; refrigerate.
Combine in a large bowl-
3 cups cooked, diced chicken breast
2 large tomatoes, diced
1 (4oz) can diced green chilies, drained
3 Tbls sliced green onion
Add half the dressing to this mixture; refrigerate.
Just before serving, dice 1 avocado and fold into the chicken mixture.
Toss the greens with the reminder of the dressing.
To serve, place the greens on a platter or individual plates. Arrange chicken mixture on top. Sprinkle with 3/4 cup grated Monterey Jack cheese. Garnish with sliced olives and more tomatoes.
Serve with tortilla chips.
