     Monterey Chicken Salad

Ingredients
DRESSING - 3/4 c sour cream
3/4 c mayo
2 tsp cumin
1/2 tsp chili powder
1/8 tsp Tabasco
1 Tbls lemon juice
SALAD - 1 large head romaine, chopped
1/2 small red onion, sliced
1/2 cup sliced jicama strips
 
1/4 cup chopped cilantro
3 cups cooked, diced chicken breast
2 large tomatoes, diced
1 (4oz) can diced green chilies, drained
3 Tbls sliced green onion
1 avocado
3/4 cup grated Monterey Jack cheese
sliced olives and more tomatoes

Instructions
Mix dressing well and refrigerate. Mix together Lettuce, onion. jicama, and cilantro; refrigerate.
Combine in a large bowl- 3 cups cooked, diced chicken breast 2 large tomatoes, diced 1 (4oz) can diced green chilies, drained 3 Tbls sliced green onion Add half the dressing to this mixture; refrigerate.
Just before serving, dice 1 avocado and fold into the chicken mixture. Toss the greens with the reminder of the dressing. To serve, place the greens on a platter or individual plates. Arrange chicken mixture on top. Sprinkle with 3/4 cup grated Monterey Jack cheese. Garnish with sliced olives and more tomatoes. Serve with tortilla chips.
