     Spinach Balls

Ingredients
2 cups prepared stuffing mix
5 eggs, slightly beaten
2 pkgs frozen chopped spinach
1 teaspoon garlic salt
1 cup parmesian cheese
1 1/2 sticks butter
1/2 cup chopped green onion
1 teaspoon lemon juice
.------Sauce------.
 
1 1/2 to 2 cup mayonaise
1/4 teaspoon dijon
1 tablespoon vinegar
1/4-1/2 tsp. lemonjuice
2 tsp. dill
1-2 t. green onion.

Instructions
Drain thawed spinach. Squeeze out all moisture. Press with paper towels until dry. Squeeze once more in paper towel. Spinach must be dry. Process lightly- so spinach is a little finer.
Mix all ingredients. Roll in 1 1/2 inch balls. Place on cookie sheet. Freeze until firm
Bake at 400 degrees for 20-25 minutes. Makes about 60 balls.
