     Turkey Roll Ups with Red Potatoes

Ingredients
1 large russet potato, washed, pierced with tip of knife
2 T. Marinara sauce or other red tomato sauce
4 slices of Turkey (deli or lunchmeat)
4 corn tortillas (2 per person)
4 lettuce leaves (Romaine is best)
4 slices tomato
2 thin slices red or yellow onion
Mustard or hot peppers (optional)
 

Instructions
For red potato, cook potato in microwave on high power 8 to 9 minutes or until fork tender. Slice lengthwise in half; spoon 1 T. sauce over each half.
Meanwhile, for turkey roll ups, layer all ingredients on tortillas; roll up.
Serving Suggestions
2 per person
