Ingredients
Eggplant, sliced lengthwise
Zucchini, sliced lengthwise
Yellow squash, sliced lengthwise
Carrots, sliced lengthwise (optional)
Olive Oil
Seasoning (optional)
 

Instructions
Place vegetables on foil, drizzle with olive oil.
You can sprinkle your favorite seasoning on top or just salt and pepper.
Fold up the edges of the foil so no drips come out. Place foil on the top rack of the oven in the foil-no pan necessary.
Bake at 350 for 20 minutes. Check consistency and bake longer if needed.
