     Fraise En Vin (Strawberries in wine)

Ingredients
1 Bottle (750ml.) fruity red wine (without oak)
1 1/2 to 2 cups granulated sugar
1 large vanilla bean, scraped
3 thin slices of lemon
2 small cinnamon sticks
Fresh strawberries
Few sprigs of mint
 

Instructions
You can also us the wine mixture as a flavoring for sparkling water, over shaved or crushed ice for a “grown-up” snow cone, over ice cream or sorbet.
Combine all of the ingredients, except the strawberries and mint, into a pot and bring to a gentle boil over medium-high heat. Stir gently with a wooden spoon until all the sugar dissolves. Remove from heat and set aside until mixture is cool. Strain and chill.
Pour over fresh sliced strawberries (or other fresh fruit such as mixed berries, pitted cherries or peaches). Let the fruit macerate for an hour in the refrigerator. Before serving, garnish with mint leaves. Mixture will keep for weeks.
NOTE- You can substitute 1 ½ teaspoon pure vanilla extract for the vanilla bean. Just add it to the mixture after you remove it from the heat.. Serve with Saracco 2007 Moscato d’Asti Piedmont or La Morandina 2007 Moscato d’Asti Piedmont or Marenco 2008 Pineto Brachetto d’Acqui Piedmont all wines available at www.thewinecountry.com
