Garlic Roast Chicken with Rosemary and Lemon

2 1/2 pounds boneless, skinless chicken cut into chunks

6 cloves garlic, crushed
|
|
3 Tbs. fresh rosemary leaves, stripped from stems
|
|
3 Tbs. extra virgin olive oil
|
|
1 lemon, zested and juiced
|
|
Salt
|
|
Black Pepper
|
|
1/2 cup dry white wine
|
|

|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Preheat oven to 450 degrees F.
|
|
|
Arrange chicken in 9x13 baking dish.
|
|
|
Add garlic, rosemary, olive oil, lemon zest, salt, and papper. Toss
and coat the chicken, and roast for 20 minutes.
|
|
|
Add white wine and lemon juice to the dish, return to oven and
turn oven off. Let stand 5 minutes longer then remove chicken
from oven.
