     Spring Salad

Ingredients
1 (16 oz) can baby peas
1 (16 oz) can french style green beans
1 (16 oz) can white shoepeg corn
1 (4 oz) jar pimentos
1 C finely chopped celery
1/2 C finely chopped onion
1 C finely chopped green pepper
2 Tbl water
3/4 C cider vinegar
 
1/2 tsp salt
3/4 C sugar
1/2 C salad oil
1/4 tsp pepper

Instructions
Drain canned vegetables and add to fresh vegetables.
Heat the dressing ingredients (water, vinegar, salt, sugar, oil and pepper)until the sugar is dissolved. Cool and pour over vegetables.
Refrigerate for 5 - 6 hours. Before serving, drain off excess liquid. Keeps well for a few days in the refrigerator.
