     Carrot Ring

Preptime   one hour

Ingredients
one cup brown sugar
two cups shortening
four eggs, separated
two cups grated carrots
four tablespoons water
two and one half cups flour
one teaspoon baking soda
one teaspoon baking powder
 

Instructions
beat first two ingredients together. Beat egg yolks then add with carrots & water to the mixture
sift dry ingredients together and then stir into wet mixture.
beat egg whites until stiff and fold into the batter
pour batter into an eight cup ring mold Bake @350 degrees for 30-45 minutes. Test with a toothpick to be sure it is baked through. Remove from mold onto round platter.
Serving Suggestions
It is pretty to have a bowl of peas & carrots in the middle of the ring
