     Fire and Spice Nuts

Ingredients
2 tsp Chinese Five Spice
2 tsp Ground Cinnamon
2 tsp Ground Ginger
2 tsp Ground Cumin
2 tsp Salt
2 large egg whites
2 cups pecans
2 cups cashews
2 cups almonds
 
2 cups pistachios
1/4 cup sugar
1/2 cup crystalized ginger cut into small matchsticks

Instructions
- Whisk spices into egg whites until well blended - fold in nuts until well-coated - sprinkle sugar over & toss to coat
- Heat oven to 225 degrees - Line two baking sheets with parchment paper - Evenly divide and spread in a single layer on the cookie sheets
- Bake until the nuts are dry - Stirring every 20 minutes (about 1 hour 20 min)
- Transfer nuts to large bowl - Mix in crystallized ginger - Store in air-tight container
Serving Suggestions
Cool completely before serving, sprinkle nuts with salt if desired
