place the sweet potatoes in a large saucepan and cover with
water. bring to a boil over medium heat and cook for 30 mins,
or until tender. drain and cool. peel and cut into cubes.
in a large bowl combine sweet potatoes, apples, and celery.
in a small bowl whisk OJ, oil, vinegar, sugar, and salt. pour
mixture over the potato mixture and toss to coat. cover and
fridge until ready to serve.
