Ingredients
2 large eggs
2 1/2 cups milk, scalded
1/3 cup sugar
3/4 cup cooked regular rice
1/4 cup raisins (or more)
1 teaspoon vanilla
1/2 teaspoon grated lemon rind ( I just use juice)
1/4 teaspoon salt
1/2 teaspoon cinnamon
 

Instructions
Beat together eggs and milk. Stir in sugar, rice, raisins, vanilla, lemon and salt. Pour into greased 1 1/2qt. casserole dish. Sprinkle with cinnamon. Set casserole in pan of hot water 1/2 inches deep. Bake 350 for 45 min or until set around edges. May be doubled 13X9 pan
