Ingredients
Yellow squash - 4-6
Zucchini - 3-4
1 onion
2 sweet green peppers
1 med eggplant
2-3 cloves garlic, diced
1 can stewed tomatoes
3 T olive oil
2 t dried oregano
 
Salt and pepper to taste

Instructions
Chop all fresh vegetables to cubes (ca 3/4 inch). Add garlic. Saute in olive oil. Add tomatoes and oregano. Cover and simmer for at least 1 hour. Remove cover and simmer to reduce liquids to 2-3 T. Add seasonings and serve.
Serving Suggestions
Hot or cold.
