     Rice Pilaf

Ingredients
1/4 cup butter/margarine
1/2 cup finely chopped onion
1 small clove garlic pressed (optional)
1/2 cup very thin egg noodles
1 cup rice
2 cups chicken broth
OPT- sauteed mushrooms, peas, diced carrot, small broccoli florets, etc
 

Instructions
Melt butter in saucepan, add onion and garlic (if using), cook briefly, add egg noodles, cook over low heat 3 minutes, stirring occasionally. Add rice, cook 5 minutes, stirring. Add broth, bring to boil, cover pan, simmer 35 minutes. Let stand 10-20 minutes before serving. Serves 3-4
