     Roasted Chicken w/ Potatoes, Artichokes, Lemons

Ingredients
1/4 cup and 3 Tbs olive oil
4 large chicken thighs
salt and pepper
10-14 oz pachage frozen artichoke hearts
1 lemon
1 lb small potatoes
4 sprigns fresh thyme
 

Instructions
preheat oven 45 degrees lightly oil heavy rimmed baking sheet, place chicken on sheet season w/ salt and pepper, place in heated oven 15 min.
rinsed artichokes under warm water, seperate them and allow to thaw (doesn't matter if not all the way). Thinly slice 1/2 lemon and juice half. With 4 tsp of lemon juice whisk w/ 3 Tbs and season w/ salt and pepper.
place artichokes, potatoes, thyme, and lemon slices, 1/4 cup olive oil, and 1 Tsp of salt and pepper with chicken.
cook 30-40 mins. Drizzle servings w/ lemon vinaigrette.
