     Chicken Soppa

Ingredients
2 chickens boiled and boned
1 chopped onion
1 fresh jalapeno pepper chopped (optional)
1 small can chopped green chilies
1 small can pimientos
1 can cream of mushroom soup
1 can cream of chicken soup
1 can chicken broth
1 pkg tortillas cut in 1/4
 
Grated Velveta cheese

Instructions
Saute onion and jalapeno in oleo. Add pimientos, soups & broth. In a large casserole dish, start with a layer of chicken, soup mixture, tortillas, then cheese. Cover with foil and bake one hour at 300 degrees. Take foil off if it is too soupy and cook longer. Keep cheese soft and not burned. NOTES- This is a dish that Ethyllyn was famous for. We would always look forward to having a church get-together so we could have this.
Ethyllyn died in October 2008. She was one of the most Godly women I've ever known. She was also the best cook. Everyone loved her and she will live in our hearts forever.
