     Mom's Quiche Lorraine

Ingredients
1 9 in. pie crust
6 slices bacon
1/2 C sliced onion (1 medium)
1/4 lb swiss cheese, diced
4 eggs, beaten
1 C milk
1 C heavy cream
1 tsp. salt
1/8 tsp pepper
 
1/4 tsp ground nutmeg
1/4 tsp dry mustard

Instructions
Preheat oven to 450 degrees. Fit pie crust into 9 inch pie pan. Poke pie shell with a fork to keep in from buckling when it bakes. Bake pie shell 10 minutes.
Fry bacon until crisp; drain and crumble. Saute onion in 1 tablespoon bacon fat just until transparent. Put diced cheese, crumbled bacon, and onion in pie shell. Combine eggs, milk, cream, salt, pepper, nutmeg and mustard -- mix well. Pour into pie shell.
Bake at 450 for 15 minutes then reduce heat to 350 and bake for 30 - 45 minutes more.
Serving Suggestions
You can reduce calories by using fat free condensed milk in the can instead of the milk and cream. Or use 2 cups of half and half.
