     Scalloped Potatoes & Carrots

Ingredients
2 1/2 lbs potatoes, peeled and sliced (about 9 medium potatoes)
5 medium carrots, peeled and cut into 1/4 inch slices
1 1/2 cups sliced onions
2 cups boiling water
1 tsp salt
Ingredients for Cheese Sauce
3 tablespoons butter or margarine
2 tablespoons all-purpose flour
 
1 teaspoon salt
1/8 tsp pepper
1 1/2 cups milk
1 1/2 cups shredded cheddar cheese (separate into 1 cup and 1/2 cup)

Instructions
For Cooking Potatoe/Carrot/Onion Mix Combine and boil in kettle. Cover and cook 10 minutes.
To Make Cheese Sauce In seperate kettle melt butter. Remove from heat. Stir in flour, salt & pepper until smooth. Gradually stir in milk. Bring to boil over medium heat, stirring constantly. Cook & stir 2 minutes. Stir in 1 cup cheese. Reduce heat. Stir until cheese is melted.
To Finish Cooking Dish Drain potatoes. Grease bottom of 9x13 glass dish. Layer 1/2 of potatoes and 1/2 of cheese sauce - repeat. Sprinkle w/ remaining cheddar cheese. Cover and bake @ 375 degrees for 20 minutes. Uncover and bake 10 minutes or until potatoes are done.
