     Toasty Breakfast Pockets

Ingredients
6 slices American Cheese
2 hard cooked eggs
2 ounces sliced deli turkey, chopped 1/2 cup
1 tablespoon mayonnaise
24 slices soft wheat or white bread
3 tablespoons butter
 

Instructions
Preheat oven to 400. Cut cheese into quarters. Chop hard boiled eggs.
Add turkey and mayonnaise to mixing bowl along with eggs, and a small amount of grated cheese.
For each pocket place 2 bread slices on cutting board and gently pat down center of breads. Place a scoop of egg mixture in center of one piece and place a the second piece on top. Cut off crust and seal edges with a fork.
Arrange pockets on a flat baking sheet. Brush with melted butter. Bake 11 to 12 minutes or until lightly browned. Top with cheese and return to oven until cheese melts.
