1 1/2 c (6oz) grated Kefalotiri or skim ricotta cheese
Instructions
Preheat oven to 375. Heat oil in skillet. Add onion and garlic. Cook until soft. Add beef and stir until browned. Stir in stock, tomato paste, cinnamon, mint, salt and pepper. Simmer 10 to 15 min or until sauce is reduced.
Meanwhile, in a pan of boiling water, cook macaroni for 8 min or until tender. Drain, and rinse with cold water and set aside.
In another saucepan, melt butter. Gradually add flour and cook 1 min. Gradually stir in milk and yogurt and simmer 5 minutes. Stir in half the cheese. Season with salt and eppper. Mix macaroni into cheese sauce. Spread half the macaroni over the bottom of large souffle dish. Cover with meat sauce, then top with remaining macaroni. Sprinkle remaining cheese over top. Bake 45 min or until browned.
