1 8 oz. can crushed/drained pineapple (save juice)
8 oz container of Cool Whip
1 T flour
1 egg
2 T lemon juice
1/2 C - 2 T chopped dry roasted peanuts
Instructions
Beat eggs with flour, lemon juice and pineapple juice. Cook until
smooth and thick. Cool. Fold in Cool Whip. Toss in rest (apples,
sugar, pineapple & nuts) Garnish with rest of chopped peanuts

Suggestions
Can serve as sweet side dish or dessert
