     Chocolate Mudd Cake

250g butter
1 1/2 cups hot water
2 cups castor sugar
1/4 cup cocoa
1 tbls instant coffee
200g dark cooking chocolate
1 1/2 cups self raising flour
2 eggs
vanilla essence
125g dark cooking chocolate
125g butter

Melt the butter, chcolate and sugar in a doulbe boiler. Pour the melted mixture into a electric mixing bowl. Add sifted dry ingredients gradually whilst mixing
Add eggs and vanilla and beat well Pour mixture into a 25cm greased cake tin In a slow oven bake for about 2 1/2 hours Let stand for a few minutes before removing the cake tin.
Apply icing when the cake is cool. ICING - melt the chocolate and butter in a double boiler and mix with a wooden spoon. When completely mixed pour over the cooled cake and smooth out.
