     Rice with Pidgeon Peas

Ingredients
1 15 oz can of green pidgeon peas
1 cup Sofrito (use 1/2 cup ea onion and peppers if none available)
1 cup tomato sauce
2 cloves of garlic, minced
1 pkt Sazon con culantro y achiote
1 tbs Adobo all purpose seasoning
3 cups water
2 cups white rice
1 cup (or less to taste) Spanish olives, sliced
 

Instructions
Combine all ingredients except rice together and bring to a boil. Stir in rice;cover. Reduce heat and simmer 20 minutes. Refrain from opening pot often as this will make rice sticky.
